North Gate Spirit Cocktail Bar

The Liquid Alchemy of Highland Folklore and Sacred Waters

Born as an architectural and philosophical evolution of our collective—and originally unveiled under the name Karma—The North Gate Spirit Cocktail Bar is a dedicated ritual space hidden within the inner moat of Chiang Mai on Ratchaphakhinai Road. While it shares a continuous, wall-less layout with its daytime cafe counterpart and an open public pocket garden, the cocktail bar exists purely to translate the deep cultural landscape of Northern Thailand into liquid narratives. Every pour here is an act of storytelling, charting a cyclical journey from the sacred mountain peaks through ethnic highland villages, down into the river valleys, and back up to the sky as vapor and rain. It is a sensory sanctuary where independent fermentation, ancient folk crafts, and community alchemy dissolve into a single glass.

The Concept

The foundational philosophy of the bar is anchored in the eternal, unyielding movement of nature. Transitioning from its original name, Karma, to North Gate Spirit, the space embraces the cosmic truth of the water cycle. It is a space dedicated to the people of Northern Thailand—their ancient ingredients, their unique community ways, and the fragile beliefs carried down from high-altitude ridge villages to the banks of the river. While the building functions alongside a daytime cafe, when darkness falls, the bar commands the atmosphere, channeling an unhurried, spirit-forward energy. The cocktails serve as physical mediums of memory, forcing us to slow down and listen to the silent dreams of the mountain people through every sip.

The Liquid Landscape
— Three Mountains, One River

The liquid landscape of North Gate Spirit is strictly defined by northern geography: Doi Luang Chiang Dao, Doi Suthep, and Doi Kham—the three sacred peaks that give birth to the historic Ping River. Following this exact topographical path, our bar is anchored by our very own North Gate Distillery, a small-batch community enterprise. We combine Thai fermentation wisdom with Japanese Shochu techniques, utilizing snow-white Koji rice (麹米) and traditional rice yeast to craft three signature house spirits (Lao Khao) that honor the land:

Sticky-Rice Lao Khao:
Distilled from northern glutinous rice—a direct tribute to the golden rice fields.

Sugarcane Lao Khao:
Distilled from pure cane—a tribute to the tropical monsoon rain.

Cacao Lao Khao:
Crafted in partnership with Thaivocoa, distilling discarded cacao husks into a velvety, aromatic spirit—a tribute to creative waste reduction.

The Design
— Hand-Fired Clay and Charred Timber

Designed by architect Patcharada Inplang(Sher Maker), the architecture of the bar acts as a physical mirror to the minds of the mountain people. Over 70% of the structure is built from raw, minimally processed reclaimed timber. Small offcuts were shaved and woven entirely by hand by our staff to clad the interior walls with a raw, folk-craft language, while some surfaces utilize ancient clay-render techniques found in northern temples. Every tactile object in the bar tells a story of ethnic heritage; all the intricate woodwork was executed by Tad Maha and Sai Hseng, legendary Shan craftsmen who brought the building wisdom of their community into the room. Some wooden furniture surfaces have been intentionally charred using traditional fire-preservation methods. Every single cup, bowl, and small plate that meets your hand is custom-crafted by Chang Mick of Charm Learn Studio CNX, making the tableware itself an organic extension of northern soil.

The House Spirits
— Three Chapters of the Cycle

1. Orchard II (Tea & Mountain Springs)

The Story:
Inspired by Doi Luang Chiang Dao—a major mineral water source and home to Lahu, Hmong, and Akha tea traditions.

The Alchemic Build:
Oolong tea infused into gin, blended with our house sticky-rice lao khao, sweetened with lychee juice and passion-fruit purée, and rounded out with hazelnut liqueur.

Style:
A clarified Milk Punch with a silken, crystal-clear body, topped with a soft strawberry foam.



2. Rakshury (The Village Herb)

The Story:
Built around Rak Chu, a pungent, wild garlic-like herb staple found on the chopping boards of Yunnanese, Shan, and Akha grandmothers.

The Alchemic Build:
Built on the structure of a classic Hanky Panky. Rak Chu-infused gin layered with Fernet-Branca, sweet vermouth, and a soft lift of Umeshu.

Style:
A bold, savory, spirit-forward cocktail garnished with crispy, house-cured Yunnanese "nam khang" pork and a savory gel of pickled Rak Chu.



3. From Rain to Roots (The Water Cycle)

The Story:
A liquid representation of water falling as rain, running through the forest, and evaporating back into the clouds.

The Alchemic Build:
Our house sugarcane lao khao (representing rain) stirred with a rich, house-made smoked-rosemary honey syrup (representing the living forest).

Style:
An Old Fashioned structure, slow and unhurried, trapped under a dense cloud of aromatic smoke from ignited local Mai Kiang (pine wood) to represent the purifying heat of fire.

The Ensemble

North Gate Spirit is a living monument to co-creation, built entirely upon the strength of a local community. It is a vital node within the broader North Gate Universe—a cultural ecosystem in Chiang Mai that deliberately weaves together jazz music, ritual spaces, functional craft, and the organic everyday life of the city. We believe that true, lasting change belongs to the community that keeps the knowledge alive. This archive of sound and liquid exists today because of the shared labor of local operators, visionaries, and world-class craft partners who poured their talent into these space.
